Miso Baked Tofu & Veg with Basmati Rice

Ingredients

  • Basmati Rice

Miso Sauce

  • 1 tbsp miso paste
  • 2 tbsp soy sauce
  • 1/2 tbsp minced garlic (or granules)
  • 1/2 tbsp maple syrup
  • 1 tbsp sesame oil (or melted coconut oil)
  • 1 tbsp water
  • 1 tbsp sesame seeds

Tofu & Vegetables

  • Chopped tofu
  • Chopped bell pepper
  • Chopped broccoli

Preparation

  1. Preheat the oven to 180°C (350°F).

  2. In a bowl, mix together miso paste, soy sauce, minced garlic, maple syrup, sesame oil (or melted coconut oil), water, and sesame seeds to make the miso sauce.

  3. Add the miso sauce to the chopped tofu and let it marinate for 15-30 minutes.

  4. Place the marinated tofu on a baking sheet.

  5. Take the leftover marinade from the tofu, add more water, and use it to coat the chopped bell pepper and broccoli.

  6. Place the coated bell pepper and broccoli on the baking sheet alongside the tofu.

  7. Roast the pepper, tofu, and vegetables in the oven for 35 minutes.

  8. Halfway through the roasting time, add the broccoli and flip the tofu for even cooking.

  9. Cook basmati rice according to package instructions.

  10. Plate the roasted tofu and vegetables on top of the cooked basmati rice.

  11. Optional: Drizzle a small amount of soy sauce on top.

  12. Enjoy your miso baked tofu & veg with basmati rice!
