Palak Green Mushroom Delight

Ingredients

  • 500g frozen spinach
  • 1 Tbsp ginger paste
  • 1/2 cup pre-soaked cashew nuts (for 10 mins)
  • 1/2 Tbsp chopped garlic
  • 1/2 cup chopped white onions
  • 1/2 Tbsp chopped green chillies (optional)
  • 1 Tspn turmeric powder
  • 1/2 tspn red chilli powder
  • 1 Tspn coriander & cumin powder
  • 1/2 Tbsp garam masala
  • Salt to taste
  • 1 Tbsp oil
  • 500g asparagus
  • 250g chestnut mushrooms (or any preferred ones)

Preparation

  1. In a non-stick pan, brown your mushrooms & asparagus on medium-low flame, turning regularly.

  2. Meanwhile, heat oil in a separate pan and fry your garlic & onions for 1 minute until translucent.

  3. Add ginger & green chillies.

  4. Add frozen spinach and let it thaw.

  5. Add the remaining spices and let it cook for 5 minutes.

  6. Transfer the mixture to a blender (e.g., Nutribullet), add cashews, and blend slowly, venting the blender cup due to steam pressure buildup.

  7. By now, the veggies should be browned, so add them into the spinach purée, heat up a little more, and serve.
