Ragi Oat Pancakes with Balsamic Maple Strawberries
Ingredients
- 1 spotty banana, mashed
- 1 tbsp flax meal
- 1 cup plant milk
- 1 tsp baking powder
- Splash of good vanilla
- 1/2 cup ragi
- 1/4 cup oat flour
- 1/4 cup wholewheat flour
- 1 tbsp coconut sugar (optional)
Strawberry topping
- Roughly chopped strawberries
- Maple syrup
- Balsamic vinegar
Preparation
Mix wet ingredients (banana, flax meal, plant milk, baking powder, vanilla) with dry ingredients (ragi, oat flour, wholewheat flour, coconut sugar) to make a batter, adjust consistency by adding or reserving milk.
Cook pancakes using coconut oil.
Roughly chop strawberries and mix with maple syrup and balsamic vinegar, let the mixture sit for 30 minutes before serving.
This recipe has potential to be gluten-free by substituting flours as needed.
