Sweet Potato Quinoa Red Lentil Patties

Ingredients

Patties

  • 205g red lentils (dry)
  • 90g quinoa (dry)
  • 1.5tbsp onion fond
  • 1/4tsp chilli flakes
  • 1/2 tsp smoked paprika
  • Salt & pepper
  • 1 × sweet potato 300g
  • 80g rolled oats
  • 120g flour
  • Sesame seeds
  • Oil to fry in

Bean mix

  • Different beans & peas
  • Oil
  • Lime juice
  • Chilli powder
  • Salt and pepper
  • Coriander

Preparation

Patties

  1. Rinse the quinoa and red lentils several times in a pot.

  2. Boil both red lentils & quinoa in some water until soft, about 15 minutes.

  3. Add onion fond, chilli flakes, smoked paprika, salt, and pepper to the pot.

  4. In another pot, boil mashed potatoes until soft.

  5. Add the boiled red lentil/quinoa/sweet potato to a mixer along with the oats and mix.

  6. Add the flour until a dough mixture has been formed.

  7. Form into patties and coat in sesame seeds.

  8. Fry for 4-6 minutes on each side.

Bean mix

  1. Mix together different beans & peas with some oil, lime juice, chilli powder, salt, pepper, and coriander.
