Broccoli Base #Glutenfreevegetarian Pizza
Ingredients
- 3 medium sized organic broccoli
- 1 packet grated @eatlean protein cheese (a great #lowcarb #highprotein option)
- 1/2 cup Parmesan
- 3 chopped green chillies (optional but makes it super delicious)
- 1tspn black pepper
- 3 eggs @clarence_court
- Pizza sauce
- 1 tin @mr_organic organic chopped tomatoes
- 2tbsp olive oil
- 1tspn chopped garlic (I always have in the fridge)
- 3tbsp chopped red onions (I always have frozen)
- handful fresh basil
- 1/2tspn Himalayan salt
- 1/2tspn black pepper
Preparation
Mince the broccoli in a food processor
Add all the other ingredients, mix and form pizza base using your hands, pressing down and shaping the round shaped base. Use baking paper to best absorb and water
Cook base in a pre heated oven at 250C whilst you prepare the pizza sauce and toppings
Sauté the garlic and onions in olive oil
Add the chopped tomatoes
Add chopped basil leaves and seasoning
My toppings were: laminated mushrooms, laminated courgette, red peppers, sweetcorn, jalapeño peppers and more protein cheese
Don’t eat EGGS?: leave out the egg and instead of each egg add a “chia-egg” which consists of pre-soaking 1tbsp of chia seeds in 3tbsp of water to form a gelatinous ball that works very well as a binding agent
Don’t have protein cheese? Add any grated cheese you like, from cheddar to mozzarella
