Kiwano Melon Sauce
Ingredients
- 2 kiwano® / horned melons
- 3 tablespoons lime juice
- 1 green onion, minced
- 1 teaspoon oil
- 1/4 teaspoon cumin
- 1 clove garlic, minced
- 1 pound lean beef sirloin, trimmed of all fat
- 4 cups shredded lettuce
- 1 1/2 cups julienne-cut cucumber.
Preparation
Cut 1 melon in half lengthwise
Use grapefruit knife or small sharp knife to scoop out pulp
In blender container or food processor bowl, combine melon pulp, lime juice, green onion, oil, cumin, and garlic
Process until well blended
Makes about 1 1/4 cups
Cut beef into thin slices
Grill or broil to desired doneness
Meanwhile, cut second melon in half, then cut crosswise into thin slices
Cut off outside skin
Set aside
Arrange lettuce on large platter
Top with grilled beef, melon slices, and cucumber sticks
Spoon sauce over top
