Chickpea Shell Pasta with Mushrooms and Marinara
Ingredients
- 1 package of chickpea pasta (e.g., Banza)
- 1 can chickpeas, drained and rinsed
- 1 jar of marinara sauce (e.g., Rao's or your favorite brand)
- 1/2 diced sweet onion
- 2 cups sliced mushrooms (e.g., portobello)
- Everything bagel seasoning
- Spinach
Preparation
Cook the chickpea pasta according to the package directions.
In a non-stick pan, dry sauté the diced sweet onion for a few minutes until softened.
Add the sliced mushrooms and a touch of salt to the pan. Cook for about 5-7 minutes until the mushrooms are soft and the onions have some color.
Pour in the marinara sauce and add the drained and rinsed chickpeas. Bring the mixture to a simmer.
Add the cooked pasta to the pan, stir to combine, and cook until everything is heated through.
Serve the pasta over a bed of spinach.
Top with everything bagel seasoning for added flavor.
