Chickpea Shell Pasta with Mushrooms and Marinara

Ingredients

  • 1 package of chickpea pasta (e.g., Banza)
  • 1 can chickpeas, drained and rinsed
  • 1 jar of marinara sauce (e.g., Rao's or your favorite brand)
  • 1/2 diced sweet onion
  • 2 cups sliced mushrooms (e.g., portobello)
  • Everything bagel seasoning
  • Spinach

Preparation

  1. Cook the chickpea pasta according to the package directions.

  2. In a non-stick pan, dry sauté the diced sweet onion for a few minutes until softened.

  3. Add the sliced mushrooms and a touch of salt to the pan. Cook for about 5-7 minutes until the mushrooms are soft and the onions have some color.

  4. Pour in the marinara sauce and add the drained and rinsed chickpeas. Bring the mixture to a simmer.

  5. Add the cooked pasta to the pan, stir to combine, and cook until everything is heated through.

  6. Serve the pasta over a bed of spinach.

  7. Top with everything bagel seasoning for added flavor.
