Creamy Avocado Dip with Veggie Pita Crackers
Ingredients
- 2 ripe avocados, pit removed
- 8 sprigs of fresh cilantro (you can leave the stems on)
- 8 fresh chives
- 1/4 cup plain vegan yogurt
- Juice of one lemon
- 2-3 cloves of garlic, crushed
- 1/4 tsp ground coriander
- 1 jalapeno, stem removed (remove seeds if desired)
- 1/4 tsp salt
- Sprinkle of red pepper flakes (for serving)
- Extra cilantro (for serving)
- @simplemills Pita Chips (sea salt flavor)
- Carrot sticks
- Celery sticks
Preparation
In a food processor, add the ripe avocados, cilantro sprigs, fresh chives, plain vegan yogurt, lemon juice, crushed garlic, ground coriander, jalapeno, and salt.
Blend the ingredients on high until smooth and creamy. If needed, scrape down the sides of the food processor and continue blending until the dip is fully smooth.
Pour the creamy avocado dip into a serving dish.
Serve the dip with @simplemills Pita Chips (sea salt flavor), carrot sticks, and celery sticks.
Optionally, sprinkle some red pepper flakes and extra cilantro on top of the dip for added flavor and visual appeal.
