Crunchy Cereal & Milk Bars

Ingredients

Cereal and Crust Layers

  • 4 cups (100g) cereal of choice
  • 1 cup (120g) oat flour
  • 1/2 cup (100g) Edward & Sons Native Forest® Organic Virgin Coconut Oil
  • 1/2 cup (80g) coconut sugar
  • 1/4 cup (80g) honey or maple syrup
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract
  • 1 tsp cinnamon

Milk Layer

  • 1/4 cup (50g) Edward & Sons Native Forest® Organic Virgin Coconut Oil
  • 2 cups (240g) powdered sugar
  • 1/2 tsp vanilla extract
  • 2-3 tbsp almond milk

Preparation

  1. Line an 8x8” square pan with parchment paper. Set it aside.

  2. In a large mixing bowl, combine the cereal, oat flour, cinnamon, and salt.

  3. In a separate bowl, microwave the coconut oil, coconut sugar, and honey/maple syrup for 30 seconds. Whisk in the vanilla extract until dissolved and well combined.

  4. Pour the coconut oil mixture into the cereal mixture. Use your hands to mix until the cereal is evenly coated.

  5. Transfer half of the cereal mixture into the prepared pan, pressing it in firmly.

  6. For the milk layer, whisk together the coconut oil, powdered sugar, vanilla extract, and almond milk until smooth and creamy.

  7. Spread the milk layer over the cereal crust in the pan.

  8. Top with the remaining cereal mixture, pressing it in very firmly.

  9. Refrigerate the pan for 4 hours or more to set the bars.

  10. Once chilled and set, slice the bars and enjoy!
