Gluten Free Vegan Sweet Potato Quinoa Cakes
Ingredients
- 1 small to medium sweet potato, skin removed and mashed
- 1 cup cooked quinoa
- 1/2 cup almond meal
- Tips of 2 spring onions
- 1 tsp. cumin
- 1/4 cup finely chopped coriander
- 2 tbsp. black sesame seeds
- Himalayan salt and pepper, to taste
- Coconut oil for cooking
Preparation
Cook the quinoa first.
Fry off the spices and spring onion tips.
Combine all ingredients.
Place the mixture in the fridge for 30 minutes to firm.
Roll the mixture into balls.
Bake in the oven for about 30 minutes.
Eat and enjoy.
