Soft Boiled Egg and Avocado Vegetable Bowl
Ingredients
- 1 egg
- 1/2 avocado
- peppers
- sweet potato
- mushrooms
- tomatoes
Preparation
Boil the egg for 7 minutes and then place in an ice bath.
Bake the sweet potato in the oven at 400°F for 45 minutes and leave it in the oven for an additional hour.
Cube the avocado.
Sauté the mushrooms.
Sauté the tomatoes.
Combine all ingredients together in a bowl.
