Soft Boiled Egg and Avocado Vegetable Bowl

Ingredients

  • 1 egg
  • 1/2 avocado
  • peppers
  • sweet potato
  • mushrooms
  • tomatoes

Preparation

  1. Boil the egg for 7 minutes and then place in an ice bath.

  2. Bake the sweet potato in the oven at 400°F for 45 minutes and leave it in the oven for an additional hour.

  3. Cube the avocado.

  4. Sauté the mushrooms.

  5. Sauté the tomatoes.

  6. Combine all ingredients together in a bowl.
