Vegan Blueberry Lollies with Coconut Yogurt and Wild Blueberries
Ingredients
- 1 cup of coconut yogurt (unsweetened)
- 3 tbsp maple syrup
- 2 cups of lightly stewed wild blueberries, sieve the liquid, set aside.
- Purple and blue spirulina powder (optional)
- A pinch of salt
- 1/2 tsp of vanilla powder
Preparation
Combine everything together, except the sieved blueberries (use for jam), in a mixing bowl.
Mix well until all the ingredients are thoroughly combined.
Pour the mixture into lolly molds, leaving a bit of space at the top.
Place the molds into the freezer for about an hour, allowing the mixture to partially set.
After an hour, insert wooden sticks into the partially frozen lollies.
Return the molds to the freezer and let the lollies freeze overnight or until they are completely firm.
Once frozen, remove the lollies from the molds by briefly dipping them in warm water to loosen them.
Serve the vegan blueberry lollies and enjoy!
