Chocolate Mint Souffle Pancakes

Ingredients

  • 60g plain flour
  • 30g dark chocolate
  • 5g chia seeds
  • 180ml almond milk
  • 1/4 tsp mint extract
  • 1/4 tsp baking powder

Preparation

  1. Mix all the ingredients together in a bowl until smooth.

  2. Heat a non-stick pan over medium heat and pour in the batter to form pancakes.

  3. Cook until bubbles form on the surface, then flip and cook the other side.

  4. Serve with your choice of toppings, such as chocolate drizzle and mint chocolate squares.
