Easy Low-Fat Pumpkin Muffins

Ingredients

  • 100g flour + 1/2 tsp baking powder*
  • 50g mashed pumpkin
  • 1 egg (vegan version available upon request)
  • 1 heaped tbsp maple syrup or golden syrup

Preparation

  1. Preheat the oven to 180°C (350°F) or gas mark 4.

  2. In a bowl, mash the cooked pumpkin.

  3. Add the flour, baking powder, egg, and maple or golden syrup to the bowl with the mashed pumpkin. Mix until well combined and sticky.

  4. Pour the mixture into muffin or cupcake cases.

  5. Bake in the oven for 15 minutes.

  6. Serve the pumpkin muffins warm. They are best enjoyed on the day of baking.
