Hot Bowls of Our Tortilla Soup

Ingredients

  • 4 cloves of garlic
  • 1/2 cup of chopped yellow onion
  • 1 tsp apple cider vinegar
  • 2 cups of chopped vine ripe tomatoes
  • 4 cups of filtered water
  • 2/3 cup of chopped green onions
  • 1/2 cup of tomato paste
  • 3 tsp of chili powder
  • 1 tsp of coriander
  • 1 tsp of salt
  • 1/2 tsp of cumin
  • 1/2 tsp of paprika
  • 1/2 tsp of black pepper
  • 1/4 tsp of chipotle
  • 2 cups of black beans
  • tortilla chips
  • avocado
  • cilantro

Preparation

  1. In a large pot on medium heat add olive oil, garlic, and onion

  2. Cook until fragrant

  3. Next add bell pepper and allow to cook for a few minutes

  4. Add tomatoes once peppers are softened and cook for 5 minutes stirring occasionally.

  5. Pour in water and half of the green onions

  6. Allow to simmer covered for 10 minutes.

  7. Next add tomato paste and seasonings and stir well

  8. Transfer soup into a blender and blend until smooth or you can use a hand stick blender to blend the soup

  9. Once soup is blended lower heat to medium-low and simmer covered for 15 minutes

  10. Once time is up turn off heat and add remaining green onions and black beans

  11. Serve and garnish with tortilla chips, avocado, fresh cilantro, fresh squeezed lime juice, and nitro all yeast flakes
