Scrambled Chickpeas

Ingredients

  • 1 tin chickpeas mashed
  • 2 celery sticks finely chopped
  • handful baby spinach
  • 1 avocado
  • 1 lemon
  • spices-
  • 1 tsp turmeric
  • 1 tsp sweet paprika
  • 1 tsp nutritional yeast
  • 1/2 tsp garlic powder
  • 1/2 tsp chilli flakes (i like it spicy)
  • splash soy sauce
  • splash apple cider vinegar

Preparation

  1. Combine mashed chickpeas, celery, spices, soy, vinegar and splash olive oil in a fry pan and fry for a few minutes

  2. Add few tablespoons of water to the pan with spinach and stir for another minute

  3. Turn off heat place chickpea mix over lettuce leaves (about 4-6) top with avocado, squeeze lemon juice, folio of relish and voila! Scrambled chickpea lettuce cups
