Scrambled Chickpeas
Ingredients
- 1 tin chickpeas mashed
- 2 celery sticks finely chopped
- handful baby spinach
- 1 avocado
- 1 lemon
- spices-
- 1 tsp turmeric
- 1 tsp sweet paprika
- 1 tsp nutritional yeast
- 1/2 tsp garlic powder
- 1/2 tsp chilli flakes (i like it spicy)
- splash soy sauce
- splash apple cider vinegar
Preparation
Combine mashed chickpeas, celery, spices, soy, vinegar and splash olive oil in a fry pan and fry for a few minutes
Add few tablespoons of water to the pan with spinach and stir for another minute
Turn off heat place chickpea mix over lettuce leaves (about 4-6) top with avocado, squeeze lemon juice, folio of relish and voila! Scrambled chickpea lettuce cups
