Scrambled Chickpeas with Lettuce Cups
Ingredients
- 1 tin chickpeas mashed
- 2 celery sticks finely chopped
- Handful baby spinach
- 1 avocado
- 1 lemon
- 1 tsp turmeric
- 1 tsp sweet paprika
- 1 tsp nutritional yeast
- 1/2 tsp garlic powder
- 1/2 tsp chilli flakes
- Splash soy sauce
- Splash apple cider vinegar
- Splash olive oil
- Lettuce leaves (about 4-6)
- Folio of relish
Preparation
Combine mashed chickpeas, celery, spices, soy sauce, vinegar, and a splash of olive oil in a fry pan and fry for a few minutes.
Add a few tablespoons of water to the pan with spinach and stir for another minute.
Turn off heat, place chickpea mix over lettuce leaves (about 4-6), top with avocado, squeeze lemon juice, add folio of relish and serve.
