Pumpkin Pie Overnight Oats Breakfast
Ingredients
- 1.5 cups oats
- 2 tablespoons chia seeds
- 2 teaspoons pumpkin pie spice
- pinch of salt
- 1/2 cup pumpkin purée
- 1/2 cup plain Greek yogurt
- 3 tablespoons maple syrup
- 1 cup almond milk
Preparation
Mix together 1.5 cups oats, 2 tablespoons chia seeds, 2 teaspoons pumpkin pie spice, and a pinch of salt.
Add 1/2 cup pumpkin purée, 1/2 cup plain Greek yogurt, 3 tablespoons maple syrup, and 1 cup almond milk.
Mix until well combined.
Let the mixture sit in the fridge for at least 4 hours or overnight.
In the morning, add almond milk until the desired texture is achieved.
Top with toppings of choice, such as nut butter, banana, or granola.
