Linzer Cookies with a Zesty Cranberry Orange Filling

Ingredients

  • 3/4 cup vegan margarine
  • 1/2 cup caster sugar
  • 1 orange, zest only
  • 1 tsp vanilla extract
  • 1.5 cup plain flour
  • 3/4 cup ground almonds
  • pinch sea salt
  • 3 tbsp icing sugar
  • cranberry orange chia jam
  • 300g cooks’ ingredients cranberries
  • 1/2 cup water
  • 2 oranges
  • 1 tbsp chia seeds
  • 2 cinnamon sticks or 1/2 tsp cinnamon
  • 1 tbsp sugar

Preparation

  1. Make chia jam by adding cranberries and water to a small pan over a medium heat. Zest and juice oranges and add to the pan with chia seeds, cinnamon sticks and sugar. Simmer for 15-20 mins until thick and jammy

  2. Prepare cookie dough by beating butter, sugar, orange zest and vanilla until light and fluffy

  3. In a large bowl, whisk together flour, ground almonds and salt. Add in the butter mixture and mix until combined to form a dough. Divide dough in half, patting each half into a disc. Wrap and chill for an hour in the fridge

  4. Preheat oven to 180•c and line two baking sheets. On a floured surface, roll one disc of dough out to 5 mm. Using a cutter, cut out cookies. Transfer to baking sheet. Make the same amount of cookies using the other disc of dough and cut out heart shapes. Transfer to baking sheet. Bake for 10 mins and allow to cool fully on a rack

  5. Fill cookies with 1/2 tsp jam each and sprinkle with sifted icing sugar
