Mesmerizing Spirulina Yogurt Bark

Ingredients

  • 2 cups unsweetened coconut yogurt
  • 1 tablespoon organic maple syrup
  • 1/2 packet of spirulina (light green version)
  • 1 full packet of spirulina (dark green version)
  • Chocolate eggs (optional)

Preparation

  1. In a medium-sized bowl, gently mix the coconut yogurt and maple syrup.

  2. Divide the coconut yogurt mixture into three portions.

  3. Take 1 cup of the yogurt mixture and spread it evenly in a 9x9" baking dish lined with parchment paper. Set aside.

  4. To create the light green version, mix 1/2 cup of the yogurt mixture with 1/2 packet of spirulina.

  5. For the dark green version, use the remaining half of the yogurt mixture and mix in 1 full packet of spirulina until well combined.

  6. Pour the light green and dark green mixtures onto the prepared baking dish, creating your desired design.

  7. If desired, scatter a few chocolate eggs on top.

  8. Place the baking dish in the freezer and freeze for a minimum of 2 hours.

  9. Once frozen, break the yogurt bark into pieces and serve.
