Thai Broccoli Peanut Bowl

Ingredients

Bowl

  • 1 small bunch lacinto kale, chopped and drizzled with 1 tsp lemon juice + 1 tsp EVOO
  • 1 red bell pepper, chopped
  • 1/2 C snow peas, chopped
  • 1/2 C purple cabbage, chopped
  • 1/4 C cilantro, chopped
  • 1 green onion, chopped
  • 1 small yellow mango, cubed
  • 1/2 C edamame
  • 2 TBSP peanuts
  • 1 carrot, julienned
  • 1 C broccoli, cut into florets

Peanut sauce

  • 1/4 C water
  • 1/4 C powdered peanut butter
  • 1 lime, juiced
  • 1 TBSP rice vinegar
  • 1 TBSP organic chili garlic sauce
  • 1 TBSP pure maple syrup

Preparation

  1. Massage kale until tender and add to bowls. Top with remaining ingredients.

  2. Mix all ingredients for peanut sauce. Season to taste.

  3. Drizzle sauce on bowls and toss to combine
