2 Ingredient Sweet Potato Spread
Ingredients
- Sweet potatoes
- 2 tablespoons plant-based vanilla protein powder
- Coconut oil or ghee (optional)
Preparation
Boil the sweet potatoes.
Peel and mash the sweet potatoes, or leave the skin on if preferred.
Mix the mashed sweet potatoes with 2 tablespoons of plant-based vanilla protein powder.
If the mixture is too dry, add a teaspoon or more of coconut oil or ghee.
Spread the mixture on your favorite bread, such as vegan seeded bread.
Top with fresh raspberries, cacao nibs, cinnamon, coconut, and a drizzle of raw manuka honey or maple syrup.
