2 Ingredient Sweet Potato Spread

Ingredients

  • Sweet potatoes
  • 2 tablespoons plant-based vanilla protein powder
  • Coconut oil or ghee (optional)

Preparation

  1. Boil the sweet potatoes.

  2. Peel and mash the sweet potatoes, or leave the skin on if preferred.

  3. Mix the mashed sweet potatoes with 2 tablespoons of plant-based vanilla protein powder.

  4. If the mixture is too dry, add a teaspoon or more of coconut oil or ghee.

  5. Spread the mixture on your favorite bread, such as vegan seeded bread.

  6. Top with fresh raspberries, cacao nibs, cinnamon, coconut, and a drizzle of raw manuka honey or maple syrup.
