7-Ingredient Raspberry and Cranberry Puffs

Ingredients

  • 1 puff pastry sheet
  • cranberry sauce
  • frozen raspberries
  • 1 tablespoon peanut butter
  • 3 tablespoons icing sugar
  • 1 tablespoon water
  • 1 teaspoon vanilla extract
  • 1 tablespoon maple syrup or golden syrup or agave nectar

Preparation

  1. Cut a puff pastry sheet into 18 squares while it is chilled, or into 9 squares if using only half the sheet.

  2. Top each square with some cranberry sauce and frozen raspberries.

  3. Bake in the oven at 180°C for 12-15 minutes.

  4. For the drizzle, whisk together the following on low heat (double the amounts if making for 18 squares): 1 tablespoon peanut butter, 3 tablespoons icing sugar, 1 tablespoon water, 1 teaspoon vanilla extract, and 1 tablespoon maple syrup.

  5. Drizzle the peanut butter mixture over the baked puffs.

  6. Optionally, dust with a little cinnamon.

  7. Relax, have a cup of tea, and enjoy.
