Auliflower and Tofu Fritters

Ingredients

  • 300 grams of cauliflower
  • 150 grams of brown rice cooked
  • 100 grams almond meal
  • 180 grams firm tofu
  • 2 tablespoon olive oil
  • salt and pepper to taste
  • 1/2 an avocado
  • 1 tablespoon of parsley
  • 1/4 raw cashews
  • 1 tablespoon lemon
  • 1 tablespoon nutritional yeast
  • 1/2 an avocado

  • In a food processor blend all the ingredients and serve with the fritters#cleaneating#healthyfood#cleanliving#plantfood#

Preparation

  1. Cut the cauliflower and tofu into small pieces. In two separate fry pans stir fry the cauliflower and tofu (this removes any liquid). Once cooked place the tofu, cauliflower, brown rice, almond meal, parsley or spring onion, salt and pepper to taste in a bowl and combine. The recepie does suggest to add rice for a firmer consistency. In the fritters that I made, I added almond meal and brown rice, which gave the fritters a more firmer texture. Shape into fritters. Should make about 7. You can make them a bit smaller and make around 10. In a frypan add your olive oil and shallow fry your fritters. Once cooked place them on absorbent paper. When you are ready to serve add the garnish. You can make a dipping sauce. I made an avocado, parsley and cashew dipping sauce. Went really well.? Avocado, parsley and cashew dipping sauce
