Avocado Basil Pesto Pasta Dish
Ingredients
- 1 cup fresh basil, stems removed
- 1 and 1/2 ripe hass avocados
- 1/4 cup walnuts
- 2 tbsp nutritional yeast
- 2 tbsp lemon juice
- 1 large garlic clove
- 1/4 tsp salt
- Generous pinch pepper
- 1 tbsp extra virgin olive oil
- 4 tbsp water
Preparation
Blend all pesto ingredients together until smooth
Cook pasta according to package instructions
Mix the blended pesto with the cooked pasta and serve
