Avocado Basil Pesto Pasta Dish

Ingredients

  • 1 cup fresh basil, stems removed
  • 1 and 1/2 ripe hass avocados
  • 1/4 cup walnuts
  • 2 tbsp nutritional yeast
  • 2 tbsp lemon juice
  • 1 large garlic clove
  • 1/4 tsp salt
  • Generous pinch pepper
  • 1 tbsp extra virgin olive oil
  • 4 tbsp water

Preparation

  1. Blend all pesto ingredients together until smooth

  2. Cook pasta according to package instructions

  3. Mix the blended pesto with the cooked pasta and serve
