Avocado Spinach Black Bean Quesadillas
Ingredients
- 2 almond tortillas
- avocado oil for spraying
- spinach
- black beans
- cumin
- vegan Gouda or plant cheese
- avocado
Sauce
- 1/2 ripe mango
- 1-2 tablespoons chipotle sauce or hot sauce
Preparation
Heat 2 almond tortillas in a pan sprayed with avocado oil on medium high, and heat spinach in the same pan while cooking.
Mash black beans onto one side of the tortilla and add a sprinkle of cumin.
Top the beans with vegan Gouda or plant cheese of choice.
Once the cheese starts melting, add the wilted spinach and mashed avocado, then fold over.
Cook for another 30 seconds.
For the Mango Chipotle sauce, blend 1/2 ripe mango with 1-2 tablespoons of chipotle sauce or hot sauce.
