Vegan Tempeh BLT Sandwich

Ingredients

  • Seed bread
  • Sliced tomato
  • Baby spinach

Sauce

  • 1 handful of fresh basil
  • 2 cloves of garlic
  • 1/4 cup of soaked cashew
  • 2 tbs of filtered water
  • 1/8 tsp of pink himalayan salt
  • 1/8 tsp of black pepper

Bacon marinade

  • 8 oz of sliced tempeh
  • 2 tbs of soy sauce
  • 2 tbs of maple syrup
  • 1/2 tsp of paprika
  • 1/2 tsp of cumin
  • Salt and pepper to taste

Preparation

  1. Combine all sauce ingredients in a pestle and mortar and blend until smooth. Set aside.

  2. Marinate tempeh in the remaining ingredients for a few minutes. Cook on a large pan over medium heat for 3 minutes each side.

  3. Spread sauce on one slice of bread, lay tomatoes on the other slice, followed by tempeh and spinach. Top with the other slice and enjoy.
