Banana Protein Cake with Hidden Peanut Butter Center
Ingredients
- 1/2 banana
- 2 tbsp oat flour (blended oats)
- 2 tbsp protein powder (e.g., vanilla soy isolate)
- 1/4 tsp baking powder
- 3 tbsp plant milk
- 3 chunks of chocolate, chopped
- 1 heaped tsp peanut butter
Preparation
Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).
In a bowl, combine the oat flour, protein powder, baking powder, and plant milk. Mix together until a cake batter is formed. If the mixture is too thick, add a little more milk.
Add the chopped chocolate chunks to the bowl and mix them into the batter.
Take a ramekin and pour most of the cake batter into the dish. Place the peanut butter on top of the batter. Pour the remaining batter over the peanut butter, ensuring it is fully covered.
Place the ramekin in the oven and bake for 20 minutes. *Note: If you prefer, you can try microwaving the cake for about a minute, although the author of the recipe has not tested this method as they do not own a microwave.
