Beet Avocado Cacao Truffles
Ingredients
- 1 large cooked beet
- 1 ripe avocado
- 1/2 tsp vanilla extract
- 3 tablespoons maple syrup
- 1 cup raw cacao powder
Preparation
Add all ingredients to a food processor and process until well combined
Transfer mixture to a bowl, cover and place in fridge for an hour
Remove from fridge and roll tablespoon-sized portions of the mixture in your hands to create little balls
Roll in coconut flakes and store in fridge
