Beet Avocado Cacao Truffles

Ingredients

  • 1 large cooked beet
  • 1 ripe avocado
  • 1/2 tsp vanilla extract
  • 3 tablespoons maple syrup
  • 1 cup raw cacao powder

Preparation

  1. Add all ingredients to a food processor and process until well combined

  2. Transfer mixture to a bowl, cover and place in fridge for an hour

  3. Remove from fridge and roll tablespoon-sized portions of the mixture in your hands to create little balls

  4. Roll in coconut flakes and store in fridge
