Black Pepper Cashew Dip

Ingredients

  • 1 cup soaked cashews
  • 3/4 cup water
  • 1/4 cup olive oil
  • 2 tsp black peppercorns (more or less depending on how spicy you like it)
  • 1/2 squeezed lemon (about 1/4 cup)
  • 1 tsp nutritional yeast
  • 1 1/2 tsp sea salt
  • 2 tbsp fresh herbs (we used thyme and rosemary)

Preparation

  1. Add everything to high speed blender except olive oil

  2. Blend until well incorporated and then slowly add olive oil until it forms a smoother paste

  3. You may want to add more or less of salt, pepper & herbs depending on your preference! Store in container in fridge

  4. Best served cold!)
