Blueberry Banana Bread in a Bowl


  • 70g self-raising flour (or all-purpose flour with 1/2 tsp baking powder; gluten-free flour works too)
  • 30g margarine
  • 40g mashed banana (overripe is ideal)
  • 2 tbsp syrup, sweetener, or sugar
  • 1 egg white or 4 tbsp chickpea water
  • Handful of blueberries


  1. If vegan, whisk the water from a can of chickpeas until it starts to go foamy. You only need 4-5 tbsp of it.

  2. Mash the banana with a fork, then add everything into any size bowl, including the whisked chickpea water or egg (except blueberries).

  3. Stir with a spoon until combined, then gently fold in the blueberries.

  4. Microwave on high for 2.5 minutes.

  5. Eat straight away. You can add a dollop of yogurt on top if desired.
