Bolognese

Ingredients

  • 1 cup tvp
  • 1 cup veggie stock
  • 1/2 can of lentils
  • walnuts
  • carrots
  • onion
  • garlic
  • red sauce (store bought or homemade)
  • 1 tablespoon of tomato paste
  • nooch
  • thyme
  • oregano
  • pasta
  • rehydrate tvp in a bowl with boiling hot stock. leave for 10 minutes
  • fry onion, carrot and garlic until fragrant
  • add tvp and cook for another 5 minutes

Preparation

  1. Rehydrate tvp in a bowl with boiling hot stock. Leave for 10 minutes

  2. Fry onion, carrot and garlic until fragrant

  3. Add tvp and cook for another 5 minutes

  4. Add lentils, sauce and seasonings along with about a cup of water. Stir well and let simmer for 20 minutes stirring often

  5. Add cooked pasta

  6. Top with home made parm. Roughly blended cashews, nooch, onion powder, garlic powder and salt
