Breakfast Sandwich

Ingredients

  • tofu
  • extra virgin olive oil
  • turmeric and smoked paprika
  • an avocado
  • tbsp of nutritional yeast and chia seeds
  • squirt of lemon
  • season to taste

Preparation

  1. Step 1: rinse and press the tofu in a paper towel, slice it and place it in a hot pan with a dash of extra virgin olive oil -

  2. Step 2: cook the tofu on a pan until crispy, add a bit of turmeric and smoked paprika, flip them half way -

  3. Step 3: in a bowl mash an avocado ?, add a tbsp of nutritional yeast and chia seeds. And a squirt of lemon ? season to taste

  4. Step 4: spread the avocado on two wholemeal slightly toasted, then add the tofu on top to make a sandwich
