Brown Rice, Roasted Cauliflower, Orange Cherry Tomatoes, and My Sweet Bean Concoction

Ingredients

  • My husband isn't feeling well
  • and decided to have cereal tonight. So
  • I decided to do a little cooking. In my bowl tonight we have brown rice
  • roasted cauliflower
  • orange cherry tomatoes
  • and my sweet bean concoction. I used 1 can of black beans
  • half a bag of frozen grilled peppers and onions
  • 1/3 cup fire roasted corn
  • 2 tbsp of tomato paste
  • 1 tbsp coconut aminos (or 2 tsp of low sodium soy sauce)
  • the juice of one lime
  • and 1 tbsp of maple. While it was heating through I added some garlic powder
  • red chili flakes
  • and basil. I portioned my beans out for what I was hungry for and topped with some healthy fats in the form of guacamole. Perfect #postworkout meal
