Brown Rice, Roasted Cauliflower, Orange Cherry Tomatoes, and My Sweet Bean Concoction
Ingredients
- My husband isn't feeling well
- and decided to have cereal tonight. So
- I decided to do a little cooking. In my bowl tonight we have brown rice
- roasted cauliflower
- orange cherry tomatoes
- and my sweet bean concoction. I used 1 can of black beans
- half a bag of frozen grilled peppers and onions
- 1/3 cup fire roasted corn
- 2 tbsp of tomato paste
- 1 tbsp coconut aminos (or 2 tsp of low sodium soy sauce)
- the juice of one lime
- and 1 tbsp of maple. While it was heating through I added some garlic powder
- red chili flakes
- and basil. I portioned my beans out for what I was hungry for and topped with some healthy fats in the form of guacamole. Perfect #postworkout meal
