Carrot Apple Muffins

Ingredients

  • 2 1/4 cups wholemeal flour
  • 1/2 cup light brown soft sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp ground ginger
  • 1 cup almond milk
  • 2 tbsp ground chia seed
  • 1 tsp vanilla extract
  • 1/2 cup oil
  • 1/2 cup grated carrot
  • 1 apple, grated
  • 1/2 cup sunflower seeds

Preparation

  1. Mix the ground chia seed with the milk and set aside while you mix the flour, sugar, salt, ginger and baking powder together in another bowl. Add the vanilla and oil to the milk mixture

  2. Then add the milk mixture along with the grated apple, carrots and sunflower seeds to the bowl with the flour and mix until just combined

  3. Spoon into muffin cases and bake for about 20 mins at 175°C or until a cocktail stick inserted comes out clean

  4. Leave to cool on a wire rack
