Carrot Soup
Ingredients
- 1 onion
- 1 clove of garlic
- 8 medium size carrots
- 2 potatoes
- 1 tbsp grated ginger
- 1 veggie stock
- 4 dl water
- 3 dl vegan cream
- 1/2-1 tsp chili powder
- 1 tsp salt
- 1 tsp black pepper
Preparation
Fry onion and garlic for 2 min in oil
Add carrots and the potato and fry for a few more minutes
Then add, grated ginger, veggie stock, the spieces and the liquids
Put on a lid and let the soup simmer on high heat
After 30 min, blend the soup with a mixer until its smooth
Add more water if needed, until you have a good consistency
I added 1 dl extra water
Serve with fresh bread
