Chickpea and Quinoa Meat-Feee-Balls and Mushroom Gravy

Ingredients

  • 1/2 cup quinoa
  • about 1/3 cup of oats
  • mustard
  • soy sauce
  • oil
  • oregano
  • basil
  • pepper
  • gravy:
  • coconut cream
  • 1/2l of stock
  • mushrooms (i used a lot)
  • nutmeg
  • soy sauce
  • balsamic vinegar
  • some flour

Preparation

  1. Add mushrooms to a large, deep pan and cook for 10 minutes

  2. Add flour to mushrooms (around 2 tablespoons...I didn’t measure)And stir around. Add some stock if you need to make it gooey

  3. Add the meat free balls and all other gravy ingredients. Simmer for 15 minutes

  4. I had mine with crispy kale, but it also goes well with sweet potato mash. If you’re still reading this, PLEASE give it a like because it took me 2 hours to write out this recipe because Brooks will not let me put him down
