Choc Raspberry Mousse Cups
Ingredients
- 50g Dark Chocolate
- 1 cup Coconut Yoghurt
- 1 tbs Choc Greens Powder (e.g., from @gardenoflifeau)
- 1 tbs Cacao Powder
- 1 tbs Maple Syrup
- Raspberry Jam
Preparation
Melt the dark chocolate and pour it around the edges of muffin cases (silicone ones work well). Place in the fridge to set.
In a bowl, whisk together Choc Greens Powder, cacao powder, and maple syrup with the coconut yoghurt to make the mousse.
Once the chocolate cups have set, add a teaspoon of raspberry jam to the bottom of each cup. Top with the chocolate mousse.
Decorate the cups with extra dollops of jam, cacao nibs, and chocolate drizzle.
Store the cups in the fridge for up to 5 days.
