Chocolate & Coconut Cookies

Ingredients

  • 1 large banana, mashed
  • 3/4 cup (75g) shredded coconut
  • Dark chocolate

Preparation

  1. Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.

  2. In a bowl, mix the mashed banana and shredded coconut until well combined.

  3. Take small portions of the mixture and form thin cookies. Place them on the prepared baking tray.

  4. Bake the cookies for 10-15 minutes until they turn golden brown.

  5. Remove the cookies from the oven and transfer them to a cooling rack.

  6. Melt the dark chocolate in the microwave or using a double boiler.

  7. Dip each cookie into the melted chocolate and sprinkle some shredded coconut on top.

  8. Allow the chocolate to set, then enjoy your delicious Chocolate & Coconut Cookies!
