Chocolate Vegan Cookie
Ingredients
- 1/2 c cocoa powder
- 1/4 c coconut flour
- 1/4 c tapioca starch
- 1/4 c decadent coconut
- 1 tsp ground cinnamon
- 1/2 tsp himalayan salt
- 1/2 tsp baking soda
- 2 flax eggs (6 tbsp ground flaxseed + 6 tbsp water)
- 1 c oatmilk (or milk of your choice)
- 1/2 cup agave nectar
- 1/4 cup nut butter (i used @roseskitchenph pb cacao)
- 1/4 c coconut oil
- 1 tbsp vanilla extract
- add ons & optional:
- chocolate chips (i used my homemade sugarfree chocolate bar)
- cashew nuts
- blanched almonds
Preparation
Preheat oven to 350 degrees and grease 8inch skillet cast iron
Mix ground flaxseed to water to make flax eggs and set aside
Mix dry ingredients followed by wet ingredients until well incorporated
Add the cashew nuts or whatever you want to add into the mixture
Pour the mixture evenly to the skillet, add chocolate chips and blanched almonds on the top
Bake in the oven for about 25 mins or until knife comes out clean
