Couscous Soup

Ingredients

  • 100 g broccoli
  • 100 g mushrooms
  • 100 g couscous
  • 1 bunch asparagus
  • 1 tsp grated ginger
  • 1 garlic clove
  • 1 spring onion
  • 1 l veggie broth
  • salt, pepper, olive oil
  • Mint paste: 1 bunch of mint
  • 1 pinch of salt
  • 1 small dried chilli
  • 1 pinch of pepper
  • 1 tsp olive oil

Preparation

  1. Heat the oil in a pan

  2. Soutee the garlic and ginger then add the mushroom and cook until they're cooked through

  3. Then add the broccoli and broth and let it boil

  4. Then add the chopped asparagus and after 5 minutes the couscous and cook for another 5 minutes

  5. Prepare the mint paste by mixing it all together

  6. Serve the soup with a little mint pesto and enjoy
