Creamy Chorizo Pasta

Ingredients

  • 1 pack of chorizo shroomdogs, chopped into chunks
  • 1 onion, peeled and chopped
  • 1 pepper, chopped
  • 2 garlic cloves, chopped
  • 1 tin beans, drained and rinsed. i used aduki beans
  • 170ml plant milk (i used unsweetened @alpro oat milk)
  • 1 tin chopped tomatoes
  • 600ml veg stock
  • 400g pasta
  • 1 and 1/2 tsp chilli powder
  • 2 tbsp nutritional yeast (or replace with cheese)
  • 1 tsp cumin
  • 2 handfuls spinach

Preparation

  1. Add the sliced chorizo to a frying pan and cook on a medium-low heat

  2. Whilst the chorizo is cooking, add the onion and pepper to a large pan and fry for five minutes

  3. Add the beans and garlic to the large pan and stir in. Leave to cook for a minute or so

  4. Add the milk, tomatoes, stock, spices and nutritional yeast to the pan and stir together

  5. Add the pasta and stir in. Pop a lid on the pan and cook until bubbling. Take the lid off and stir. Cook until all the liquid has evaporated. Stir regularly and if the pasta is not cooked by the time all the liquid has been evaporated, add a splash of water until cooked

  6. Stir in the chorizo and spinach

  7. Plate up and enjoy
