Creamy Tahini Kale Salad (Oil Free)

Ingredients

  • 1 clove garlic, crushed
  • 4 scallions, diced
  • 6 tbsp sesame tahini (try to find raw)
  • 3-4 tbsp apple cider vinegar
  • 6 tbsp lemon juice
  • 2 tbsp water
  • Cracked black pepper to taste
  • OPTIONAL: 1/2 tsp salt

Preparation

  1. Combine all ingredients in a food processor and blend until smooth and creamy

  2. Throw on top of chopped kale (make sure to remove the stems) and MASSAGE dressing into kale until soft! ??OPTIONAL: add additional ingredients such as tomatoes, cucumber, etc for extra crunch
