Creamy Vegan Mango Pudding Delight
Ingredients
- 1 1/2 cup mango chunks
- 8 oz silken tofu (1/2 packet or 454g)
- 3/4 cup coconut cream, whipped
- 3 tsp agar-agar
- 2 tbsp maple syrup
- @bakeryonmain granola
- Blueberries
- Fresh mango
Preparation
In a blender, combine the mango chunks, silken tofu, and whipped coconut cream. Blend until smooth and creamy.
In a small saucepan, mix the agar-agar with a splash of water. Let it sit for a few minutes to allow the agar-agar to bloom.
Gently heat the agar-agar mixture over low heat, stirring continuously until it dissolves completely.
Add the dissolved agar-agar and maple syrup to the blender with the mango mixture. Blend again until everything is well combined.
Pour the mixture into individual serving cups or a larger dish. Refrigerate for at least 2-3 hours, or until the pudding sets and becomes firm.
Once the pudding is set, garnish with your choice of toppings such as @bakeryonmain granola, blueberries, and fresh mango.
Serve the vegan mango pudding chilled and enjoy its delightful texture and fruity flavor.
