Creamy Vegan Rice Pudding
Ingredients
- 250ml rice grain (suitable for rice pudding or sushi)
- 400ml water
- 1l oat cream
- Approximately 50-60ml Stevia/sugar
- Optional: cinnamon stick
- 1 tsp salt
Preparation
Measure out the rice and wash/strain it a few times to remove some of the starch (optional step).
In a pot, add the water and heat it until it starts to simmer/boil for about 5-10 minutes.
Pour in 3/4 of the oat cream, sweetener, and cinnamon stick (if using). Lower the heat to medium/low.
Cover the pot with a lid and allow the mixture to simmer for 15-20 minutes. Occasionally check on it and gradually add more oat cream as needed.
Continue simmering for another 10-15 minutes, totaling approximately 40-45 minutes of cooking time. Add more liquid (oat cream) if necessary. Towards the end, once the rice is soft, turn off the heat and add a little more oat cream. Mix well and let it sit with the lid on. The rice pudding will continue to absorb the liquid.
