Creamy Vegetable and Chickpea Pasta Dish

Ingredients

  • veg of your choice (courgette, aubergine, spinach, cherry tomatoes)
  • 2 garlic cloves
  • 1 red onion
  • chickpea pasta
  • sundried tomatoes
  • tomato paste
  • tahini
  • seasoning (mixed herbs, veg stock or salt)

Preparation

  1. Fry the onion and garlic with a sprinkle of salt until soft & browned.

  2. Cut your cherry tomatoes in half and add to the pan.

  3. Add in your veg with a bit of water and cook until soft and have a bit of colour.

  4. Cook pasta at the same time in a separate pot.

  5. Add the Sundried tomatoes with a tiny bit of the oil for flavour and fry the veg for a couple more mins.

  6. Add some tahini, tomato paste and your seasoning until all creamy & mixed together.

  7. Add the cooked pasta and a bit of pasta water, mix & enjoy.
