Creamy Vegetable and Chickpea Pasta Dish
Ingredients
- veg of your choice (courgette, aubergine, spinach, cherry tomatoes)
- 2 garlic cloves
- 1 red onion
- chickpea pasta
- sundried tomatoes
- tomato paste
- tahini
- seasoning (mixed herbs, veg stock or salt)
Preparation
Fry the onion and garlic with a sprinkle of salt until soft & browned.
Cut your cherry tomatoes in half and add to the pan.
Add in your veg with a bit of water and cook until soft and have a bit of colour.
Cook pasta at the same time in a separate pot.
Add the Sundried tomatoes with a tiny bit of the oil for flavour and fry the veg for a couple more mins.
Add some tahini, tomato paste and your seasoning until all creamy & mixed together.
Add the cooked pasta and a bit of pasta water, mix & enjoy.
