Crispy Cauliflower with Super Green Creamed Beans

Ingredients

Cauliflower

  • 1 whole cauliflower
  • 1 tbsp smoked paprika
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 2 tsp chilli flakes
  • 2 tbsp olive oil

Green bean blend

  • 2 x 400g tin butter beans
  • 50g spinach
  • 20g fresh basil
  • 20g fresh coriander
  • 2 tsp Spirinula
  • 2 tsp garlic powder
  • 30g Nooch
  • 1 tbsp extra virgin olive oil
  • 1 tbsp maple syrup
  • Salt and pepper to taste

Garnish

  • Crispy shallots

Preparation

  1. Cut the cauliflower into large florets and bite-sized stem chunks.

  2. Toss the cauliflower with oil and spices on a tray, then roast at 200°C for 25-30 minutes until golden and tender.

  3. Blend the butter beans, greens, and seasonings until smooth, adding water if needed.

  4. Spread the green bean blend on a plate, top with roasted cauliflower, and finish with crispy shallots and roasting oil.
