Crispy Cauliflower with Super Green Creamed Beans
Ingredients
Cauliflower
- 1 whole cauliflower
- 1 tbsp smoked paprika
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 2 tsp chilli flakes
- 2 tbsp olive oil
Green bean blend
- 2 x 400g tin butter beans
- 50g spinach
- 20g fresh basil
- 20g fresh coriander
- 2 tsp Spirinula
- 2 tsp garlic powder
- 30g Nooch
- 1 tbsp extra virgin olive oil
- 1 tbsp maple syrup
- Salt and pepper to taste
Garnish
- Crispy shallots
Preparation
Cut the cauliflower into large florets and bite-sized stem chunks.
Toss the cauliflower with oil and spices on a tray, then roast at 200°C for 25-30 minutes until golden and tender.
Blend the butter beans, greens, and seasonings until smooth, adding water if needed.
Spread the green bean blend on a plate, top with roasted cauliflower, and finish with crispy shallots and roasting oil.
