Cucumber & Fennel Salad

Ingredients

  • 2 cups thinly sliced fennel bulb
  • 1 tbsp rice vinegar
  • 1 tsp of dried dill or fresh
  • 1/2 tsp himalayan salt
  • freshly ground pepper, to taste
  • 1/4 cup chopped fresh parsley
  • 1/4 cup sliced onions (optional)
  • 1/3 cup toasted pine nuts
  • Juice of 1 - 2 lemons (depends on how sour you want it)

Preparation

  1. Lemon juice, vinegar, salt and pepper in a large bowl until combined

  2. Add cucumbers, onion (optional), fennel, parsley and pine nuts
