Cucumber & Fennel Salad
Ingredients
- 2 cups thinly sliced fennel bulb
- 1 tbsp rice vinegar
- 1 tsp of dried dill or fresh
- 1/2 tsp himalayan salt
- freshly ground pepper, to taste
- 1/4 cup chopped fresh parsley
- 1/4 cup sliced onions (optional)
- 1/3 cup toasted pine nuts
- Juice of 1 - 2 lemons (depends on how sour you want it)
Preparation
Lemon juice, vinegar, salt and pepper in a large bowl until combined
Add cucumbers, onion (optional), fennel, parsley and pine nuts
