Fresh Cucumber and Fennel Salad for Bloat Reduction
Ingredients
- 2 - 3 cups of cucumber slices
- 2 cups thinly sliced fennel bulb
- 1 tbsp rice vinegar
- 1 tsp of dried dill or fresh
- 1/2 tsp Himalayan salt
- Freshly ground pepper, to taste
- 1/4 cup chopped fresh parsley
- 1/4 cup sliced onions (optional)
- 1/3 cup toasted pine nuts
- Juice of 1 - 2 lemons
Preparation
Mix lemon juice, vinegar, salt and pepper in a large bowl until combined.
Add cucumbers, onion (optional), fennel, parsley and pine nuts.
Toss and enjoy!
