Fresh Cucumber and Fennel Salad for Bloat Reduction

Ingredients

  • 2 - 3 cups of cucumber slices
  • 2 cups thinly sliced fennel bulb
  • 1 tbsp rice vinegar
  • 1 tsp of dried dill or fresh
  • 1/2 tsp Himalayan salt
  • Freshly ground pepper, to taste
  • 1/4 cup chopped fresh parsley
  • 1/4 cup sliced onions (optional)
  • 1/3 cup toasted pine nuts
  • Juice of 1 - 2 lemons

Preparation

  1. Mix lemon juice, vinegar, salt and pepper in a large bowl until combined.

  2. Add cucumbers, onion (optional), fennel, parsley and pine nuts.

  3. Toss and enjoy!
