Moist and Flavorful Dairy-Free Pumpkin Muffins
Ingredients
- 1 3/4 cup white flour or white spelt
- 1 cup cane sugar
- 1/2 cup brown or coconut sugar
- 2 tsp cinnamon
- 1 tsp baking soda
- 1 tsp nutmeg
- 1/2 tsp ginger
- 1/2 tsp unrefined salt
- 1/4 tsp cloves
- 2 eggs
- 1 15oz can pumpkin purée or homemade
- 1/2 cup melted coconut oil
- 1 tsp vanilla extract
Preparation
Preheat oven to 375F.
Mix dry ingredients together in a bowl.
Mix wet ingredients together in a bowl.
Combine wet ingredients with dry ingredients.
Mix well and divide batter between 12 muffin cups.
Bake for 30 minutes.
Tips
Use white flour and sugar for a beautiful orange color.
Add mini dark chocolate chips if desired for children.
Ensure all ingredients are organic for best results.
Note that no baking powder is used in this recipe.
