Easy Cold Sesame Noodles with Edamame and Vegetables
Ingredients
- 1 carrot, grated
- 1 yellow pepper, diced
- 1 capsicum, diced
- 1 cup diced red cabbage
- 1 cup edamame
- Small bunch of coriander, finely chopped
- Small bunch of spring onions, finely chopped
- 10 mint leaves, finely chopped
- 250 grams wholemeal rice noodles
- Kewpie Sesame Soy Dressing
- Chopped peanuts and sesame seeds, for garnishing
Preparation
Cook the noodles according to the package directions, then drain and rinse under cold water.
In a large salad bowl, combine the cooked noodles with the grated carrot, diced yellow pepper, diced capsicum, diced red cabbage, edamame, finely chopped coriander, spring onions, and mint leaves.
Add the Kewpie Sesame Soy Dressing to the bowl and toss everything together until well combined.
Garnish the noodles with chopped peanuts and sesame seeds.
Serve and enjoy the cold sesame noodles right away.
